Summer has come to an end, but its effect still lingers. Fresh seafood is always in demand, and it is available here. Hokkaido scallop or hotate is known for its juicy texture and sweet taste. With Japanese cooking style and a French twist, it tastes even better. Slightly seared, seasoned with pesto sauce, and served with dried fish soup, it transports you right to the beach of Hokkaido.
The Atlantic bluefin tuna is the jewel of the Atlantic. Naturally sweet with melt-in-the-mouth texture, it is sliced in Japanese style, seasoned with yuzu orange, sliced shallot, and sake jelly and topped with salmon roe. You will feel as if you were in Tsukiji Fish Market.
French sole fish is loved by foodies and chefs alike, thanks to its wonderful texture which matches perfectly with Japanese cooking style.
When it comes to salmon, Norwegian salmon is the best. Raised in a natural environment, the taste of salmon is fresh, and Glen Bar’s special smoking technique makes it even more delicious.
