In this issue, I will take you to enjoy dishes that have been well thought out to celebrate the month of love.

Romantic dishes and Japanese food seem to be totally different things, but at Tenko Restaurant, Chef Goji has travelled from Japan to create special dishes for the month of love. He is inspired by the story of Benzaiten or Japan’s Goddess of Love.  

Benzaiten is one of the Seven Gods of Fortune (fukujin). She is the God of Eloquence, Dance, and Music. It is believed that Benzaiten’s worshippers will be led to light. In the past, Japanese geishas worshipped Benzaiten, believing that she would bless them with beautiful dances. Chef Goji brings the legend of Benzaiten into omakase dishes for this February.

Omakase is a dining experience which allows the chef and his customer to communicate through food. Only the best ingredients are chosen and cooked with minimal manipulation to ensure the ingredients’ natural freshness and flavours. 

The sequence of the dishes flows slowly and rhythmically from start to finish. The chef begins with Japanese tofu stuffed with tuna, ikura and eggplant, followed by Nishin fish with pickled lotus roots, homemade Goma tofu, Japanese spear squids, and an assortment of sushi. The meal wraps up with clear vegetable soup with hotate scallops, served with Dassai Junmai Daiginjo Migaki Niwari Sanbu 23.

Complete the meal with desserts at The Junction, designed to welcome this season with beautiful colours. For this Valentine’s Day, The Junction presents colourful treats for couples, such as Yoghurt Raspberry Tart Cake, Rose Mousse Cake and Red Velvet Cake.

Tamago tofu and Hokkaido uni with snow crab sauce.

TEXTURE AND FLAVOUR

Delicate Kyoto tofu skin, ikura and organic eggplant in homemade bright and sweet dashi broth.

NATURAL GOODNESS

Homemade Goma tofu from Kyushu has a naturally sweet flavour. 

OCEAN DEEP

Japanese spear squid from Yamaguchi or Yari ika Somen is shredded into strings, served with uni roe in a special sauce.

FRESH FINALE

Clear vegetable soup with hotate scallops offers Japanese-style freshness.

SUMMER TREAT

Nishin fish and pickled lotus roots make a perfect summer treat to help you cool down.

Yoghurt Raspberry Tart Cake is a heart-shaped pink tart that gives instant freshness.
